This is possibly the easiest recipe I have ever made up. Not only is it pretty simple, but aside from fresh cilantro, you probably have each of these ingredients on hand or in the freezer in case of a snack emergency.
It makes a perfect light lunch, appetizer or snack for adults or kids. Barbecue Chicken Pizza Snacks
1 flour tortilla, fajita size
¼ cup barbecue sauce (I just used the good ol’ Kraft Original)
1 chicken tenderloin, cooked and shredded (for quickness, I used the George Foreman grill)
¼ cup shredded cheese (I used Colby-Jack mix)
2 Tablespoons cilantro
2 Tablespoons diced red onions
Sprinkle with Italian herb blend (optional)
Preheat oven to 375.
Cook chicken thoroughly. Add chicken to barbecue sauce. Spread mixture evenly across tortilla. *Use more barbecue sauce if you prefer a smokier taste. I found that more than a ¼ cup was too much for me. I like the taste to be more of a hint, especially since it is a snack-appetizer type.
Sprinkle cilantro and red onions on top of chicken mixture. Add cheese. Sprinkle Italian herbs on top of cheese, for more color and flavor.
Place tortilla directly on oven rack (bake about 8 minutes) or place it on a doubled-over piece of foil or in the middle of a pizza or cookie sheet. Bake 10 minutes, or until cheese is melted and tortilla is crisp.
Cool. Use pizza roller to cut into four equal pieces.
